# Naturally Petulant (Birling) 2025

**Description**  
A true Pet Nat made from the first fruit of our new planting at Birling Estate. Fresh and full of character.

**Winemaking**  
Whole bunches, gently pressed. Partially fermented in stainless steel with indigenous yeast and bottled before fermentation completed to capture natural sparkle. Roughly hand disgorged. No SO₂ additions.

**Tasting Notes**  
Nose: Raspberry, apple crumble.  
Palate: Red apple, raspberry and sweet redcurrant.

**Food Match**  
A buttery doorstep sandwich (we favour fish finger), or anything eaten outside
