# Petulant Nature Chardonnay 2025

**Description**  
Our first Chardonnay Pet Nat. Bottled mid-fermentation to capture its natural fizz.

**Winemaking**  
Whole bunches, gently pressed. The juice was left briefly in the fruit tray before being transferred to an open topped tank to encourage a gentle oxidative character. Fermented in stainless steel with indigenous yeast and bottled before fermentation completed to capture natural sparkle. Roughly hand disgorged. No SO₂ additions.

**Tasting Notes**  
Nose: Green apple, salty pie crust.  
Palate: Lemon tart, citrus and a soft, savoury edge.

**Food Match**  
Fish and chips on a Kentish beach, at sunset.
