Grapes: Chardonnay, Pinot Meunier, Pinot Noir.
Harvest: 23rd October 2021. Picked at 17 Brix.
Winemaking: Macerated on skins for a long weekend, partially fermented in stainless steel tank with indigenous yeast. Bottled once desired density was reached and roughly disgorged.
Bottled: 6th November 2021. Manual gravity filler, no filtration or additions.
Colour: Rose Quartz
Nose: Wild strawberries, lemon zest.
Palate: Rhubarb, raspberries, sherbet.
Food Match: Fish and chips, oysters. Everything.
