Fermented in stainless steel at slightly lower temperatures yields precise floral aromas of honeysuckle, grapefruit and peach.

Fermented in stainless steel tanks at cool temperatures and co-fermented with ripe Regent to add notes of bright red crunchy fruit.
English Pet Nat made from our signature Ortega grapes, partially fermented in stainless steel with indigenous yeasts.
1 Bottle of Ortega Amphora 2017
When we bottled the original 2017 Amphora, we chose to leave a small allocation in an old Burgundy barrel to explore how it would age.
Fermented on skins slowly using wild yeasts, then aged in old Burgundy barrels for 9 months before bottling - unfined & unfiltered.

Fermented and aged in a terracotta Amphora has given greater power and depth with honeyed notes to the floral aromas of the Ortega grapes.
