Fermented in stainless steel at slightly lower temperatures yields precise floral aromas of honeysuckle, grapefruit and peach.
1 Bottle of Chardonnay 2018
100% Chardonnay made using the best low-yielding vines. Pressed gently and fermented in a stainless steel tank, aged in old Burgundy barrels for 12 months.
1 Bottle of Ortega Amphora 2017
When we bottled the original 2017 Amphora, we chose to leave a small allocation in an old Burgundy barrel to explore how it would age.
Our traditional bottle-fermented Pelegrim NV, made from the Chardonnay, Pinot Noir & Pinot Meunier with reserve wines for complexity.
1 Bottle of Petulant Nature 2019
English Pet Nat made from our signature Ortega grapes, partially fermented in stainless steel with indigenous yeasts. Limited to 450 bottles.
1 Bottle of Blanc de Noir 2013
Produced using the traditional bottle fermentation method with Pinot Noir & Pinot Meunier grapes, with extended lees ageing.
1 Bottle of Special Pink 2014
Made using the saignée method. Pinot Noir & Pinot Meunier, with a touch of Chardonnay, aged for 36 months before disgorgement.
Fermented in stainless steel tanks at cool temperatures and co-fermented with ripe Regent to add notes of bright red crunchy fruit.
1 Bottle of Ortega Skin Contact 2019
Fermented on skins slowly using wild yeasts, then aged in old Burgundy barrels for 9 months before bottling - unfined & unfiltered.
1 Bottle of Field Blend 2018
Our Field Blend is made from three adjacent rows - two of Pinot Noir and one of Chardonnay. Wild yeast ferment.
1 Bottle of Ortega Amphora 2019
Fermented and aged in a terracotta Amphora has given greater power and depth with honeyed notes to the floral aromas of the Ortega grapes.
