Description
A deep orange wine made from Ortega grapes fermented on skins.
Grapes: Ortega Clone 25, 1,500 Kilos. Picked at 19 Brix and 7TA.
Harvest: Three quarters of the grapes were de-stemmed into a variable stainless steel tank, with a quarter whole bunch clusters added. Fermentation on skins took place slowly over three weeks via indigenous yeasts. The wine was then racked and aged in old Burgundy barrels for 9 months before being bottled using a gravity filler.
Bottled: 17th September 2021, unfined and unfiltered.
Closure: Cork with wax seal.
Nose: Orange blossom, honeysuckle.
Palate: Apricot, Dandelion.
To Serve: Chill and decant before serving, especially good with cheese.
