Winemaker Adrian’s notes:
“Summer Field is one of my favourite wine styles. With a jewel-like colour, and beautifully fresh acidity from the Chardonnay, the wine is balanced by vibrant strawberry and cherry fruit from the Pinots. A touch of tannin on the finish gives a little black pepper twist.
We created Summer Field because we thought it would be fun to try and make a red wine from the fruit we usually use to make a white traditional method sparkling. It’s a style we have produced iterations of for a few vintages and feel it works really well with our fruit. Look out for further adventures in 2022”.
Grapes: 50% Pinot Meunier, 45% Pinot Noir, 5% Chardonnay
Harvest October 11th: Picked at 19.3 Brix and 10.2 TA.
Winemaking: Destemmed into stainless steel tanks and left to macerate, racked and fermented with indigenous yeasts at cool temperatures. Natural malolactic fermentation in May and bottled in June.
Colour: Carmine.
Nose: Wild strawberries, white cherry, fresh rosemary.
Palate: Cherry juice, strawberry flesh, white pepper.
Food Match: Whole roast fish, belly pork, celeriac. Drink in the sunshine.
