Grapes: Pinot Noir (18%), Pinot Meunier (48%), Chardonnay (34%).
Harvest: 17th October 2023. Picked at 17.8 Brix 11 TA.
Winemaking: Making a true Pet Nat is a tricky process - bottling at the perfect point mid-harvest and leaving the wine to develop with nothing added. This one got away from us and we had to make a sugar and yeast addition prior to bottling in May 24. It worked. Roughly hand disgorged.
Colour: Watermelon rind.
Nose: Red apple, sour cherry.
Palate: Raspberries, white peach, brown sugar.
Food Match: Chip shop chips, miso aubergine, anything from the sea.
Closure: Crown cap.
