Grapes: Pinot Meunier 55% - Pinot Noir 30% - Chardonnay 15%
Harvest: October 12th 2020 at 19.6 Brix and 10 TA
Winemaking: Fermented in open top stainless steel with indigenous yeasts. Punched down by hand twice daily. Aged in old Burgundy barrels for 18 months after fermentation.
Bottled: June 1st 2022 Gravity filled, unfiltered, small SO2 addition.
Nose: Blackcurrant, fresh rosemary
Palate: Bramble fruits and spice
Food Match: Roasted game, particularly quail. Anything sat by a fireside.
