When we bottled the original 2017 Amphora, we chose to leave a small allocation in an old Burgundy barrel to explore how it would age.

Fermented on skins slowly using wild yeasts, then aged in old Burgundy barrels for 9 months before bottling - unfined & unfiltered.
English Pet Nat made from our signature Ortega grapes, partially fermented in stainless steel with indigenous yeasts.
1 Bottle of Chardonnay 2018
Made using the best low-yielding vines. Pressed gently and fermented in a stainless steel tank & aged in old Burgundy barrels for 12 months.
Our Field Blend is made from three adjacent rows - two of Pinot Noir and one of Chardonnay. Wild yeast ferment.
1 Bottle of Ortega Amphora 2019
Fermented and aged in a terracotta Amphora has given greater power and depth with honeyed notes to the floral aromas of the Ortega grapes.
