A bright, clean wine, undisgorged made in the col fondo style.
Grapes: Chardonnay, Pinot Meunier, Pinot Noir.
Harvest: 23rd October 2021. Picked at 17 Brix.
Winemaking: Macerated on skins for a long weekend and fermented in stainless steel tank with indigenous yeast, aged on lees for 9 months.
Bottled: June 2022. Manual gravity filler, with a sugar and yeast addition.
