Description
A fruit-forward sparkling wine, fermented using wild yeast.
Grapes: Chardonnay, Pinot Meunier + Pinot Noir
Harvest: October 2023 & 2024
Winemaking: Base wine blended from pressings of the ‘23 Pinots and fermented together in stainless steel. The following harvest we added Chardonnay must that had just started to ferment, then bottled immediately.
Bottled: November 4, 2024
Nose: Jasmine, candied peel
Palette: Green apple skin, lemon sherbet, salt
Food Match: Bloomy cheeses, whitebait, bread + butter
Closure: Crown Cap
Bottle Size: 75cl
