Description
A blend from the final hard press of Pinot Noir and Pinot Meunier, containing the juice normally too coloured and tannic for sparkling wines. Wild on the nose, savoury and herbal on the finish, with a fruity mid palate. A fun experimental run proving there's value in every last drop.
Winemaking
Made from the third pressings of all Pinot Noir and Pinot Meunier harvested in 2023. Fermented via a constantly evolving wild ferment in stainless steel, with previous experiments also including barrel, steel and plastic.
