All our wines are made from grapes grown on our estate as we wish to have complete control of the process from grape to glass. This ensures that only the best fruit is selected for each of our wines plus truly reflecting the personality of the land on which they are grown.
Our fully equipped winery is designed specifically for producing aromatic still whites and fine sophisticated sparkling wines, using one of the most gentle presses available.
We preserve the innate freshness using temperature control, minimal handling of the juice and wine with a low interventionist approach.
Blanc de Blancs
100% Chardonnay and aged for a minimum of 36 months in bottle before disgorgement.
Made from the three Champagne varieties and aged for a minimum of 24 months before disgorgement.
Produced using the rarer saignée method and aged for a minimum of 36 months before disgorgement.
Pelegrim, meaning pilgrim in Middle English, is produced using traditional bottle fermentation.
Fermented & aged in a terracotta Amphora has given greater power & depth to the floral notes.
Peaches and grapefruit on the nose, medium bodied, with a dry, fresh and ‘zingy’ length.
Cranberries & roses on the nose, leading to peach, apple & a hint of raspberry with a good length.
Notes of lemon, apples and wet stones followed by gentle citrus flavours with a touch of herbs.
